Delicious Mexican Food Become Magicals With The Traditional Mexican Foods
Most of the foods that we eat in Mexican restaurants are not truly authentic Mexican, they are Tex-Mex. These adaptations give us a flavor of the cuisine, but not the meat of it. If you go to Mexico, you will see that the foods are very regionalized. While some ingredients are popular all over the country, each region has their own special ingredients. Many of the basic ingredients have changed little since the days of the Aztecs and Mayans. Avocados, beans, squash, corn, chilies, and tomatoes are popular throughout the country.
For example, if you visited the area around Puebla in Mexico, you would see lots of dishes covered with mole sauce. Mole is a thick, sweet sauce made from spices, herbs, and chocolate. It is traditionally served with turkey, but can also be found with other dishes.
Mexican recipes near Veracruz specialize in fresh fish. Veracruz happens to sit along the coast, so the people there rely on fresh seafood for most of their meals. Everything from tamales and tacos to specialty dishes are made from seafood in this region. Fish recipes are most commonly served with olives, tomatoes, and chilies.
If you travel to the Yucatan, you will find Mexican food that is served with fruit sauces. Oranges, bananas and other tropical fruits are used every day. They also serve many dishes in banana leaves. Specialties of the region include pollo pibil, which is chicken that has been marinated with oranges and spices before being wrapped in banana leaves and barbecued, and pork fillet served with onions, spices, and tomatoes.
Since many people vacation in the Yucatan every year, they are treated to some fabulous authentic cuisine. These regional cuisines would make very successful restaurants in the United States if they were introduced to the general public.
In Oaxaca, traditional Mexican recipes resemble those found in Puebla, but there are slight differences that you will appreciate. An example is in their mole sauce. Oaxaca cooks put banana into the sauce. They also season their coffee with cinnamon and sugar. One of the special sauces in this region is made from pumpkin seeds. It is often served on chicken.
If you plan on traveling to Mexico to sample the authentic foods, it is best to stick to the basics for the first few days to avoid upsetting your stomach. It is not uncommon to get an upset stomach when you travel away from home due to unfamiliar bacteria. Safe food options include tostadas, plain fish, quesadillas, sandwiches, beans, rice, and enchiladas. Be sure to check the list of ingredients before ordering to make sure you do not get unfamiliar items.
After a few days, your system will adapt to the new surroundings. This is when you should indulge in the regional specialties. If you have an extended stay, you may need to readapt when you go home, so be prepared. Stick to simple foods for your first few days back home.
